THE FRENCH CHEF OWNER
The French chef owner, “Chef Gwen” began his culinary training in France, working in a variety of settings and capacities. After years of honing his cooking skills, he has spent the past several years combining “hands on” cooking with emphasis on the necessary elements to run award winning businesses.
Having grown up in France and learning cooking in a famous culinary Institute, his cuisine is based on traditional French techniques. Over the years, particularly after working at Jean-Georges (N.Y.C.), he has broadened his culinary repertoire with influences and accents from very diverse locations, including Mediterranean borders, Asia and South America. He also has experience in traditional and contemporary American food, utilizing ingredients from all over the world.
His drive, passion and love for cooking have contributed to focusing on quality, freshness and consistency. He derives much pleasure from working with seasonal ingredients, while still creating new dishes.
He has worked with Celebrity Chef Anthony Bourdain during forums, festivals and benefits. He also won “Chopped” on the Food Network, in 2013.
By opening a French restaurant in WILKES-BARRE in November 2014, Chef Gwen realized he could offer to the inhabitants of the community of N.E.P.A., the opportunity to discover the variety of an authentic French gastronomy. His priority, as always, is to serve fresh, homemade and high quality products while respecting the French culinary tradition.
